Ajwain trade begins with botanical identity, product form and governing specification—not a generic spice label. Whole dried ripe fruits of Trachyspermum ammi, ground ajwain, planting seed and ajwain oil are separate products and are not automatically comparable. A usable whole-fruit offer identifies scientific name and declared common name, whole or ground style, food or planting use, origin and crop, moisture, extraneous matter, damaged or broken fruit, volatile-oil result and method, sensory and infestation condition, pesticide and contaminant evidence, treatment, lot, package, quantity, currency, Incoterm, destination, delivery window and information vintage.

Whole fruit, ground spice, planting seed and oil are separate products

The Spices Board identifies bishop's weed or ajwain as Trachyspermum ammi and describes the commercial part as the fruit. FSSAI's food standard likewise defines Ajowan as dried ripe fruits commonly called seeds. Ground spice changes particle-size and authenticity evidence, planting seed adds purity, germination and treatment requirements, and ajwain oil is a processed product with its own composition and use basis. Current Indian crop evidence is state-specific and provisional

The Spices Board's June 2026 table labels 2025/26 values as estimates. It records 46,190 hectares and 48,673 metric tons for Gujarat, 7,331 hectares and 7,986 metric tons for Madhya Pradesh, and 4,259 metric tons for Rajasthan. Those state rows are not a world total and do not establish harvested quality, stock availability, export supply or a particular lot's origin and condition. Food-standard limits do not replace lot inspection

FSSAI's Ajowan standard sets maximum moisture at 11 percent by weight, extraneous matter at 2 percent, and shrivelled, damaged, insect-damaged or broken fruit at 2 percent, with volatile oil at a minimum 1.5 percent volume by weight on a dry basis. It also requires characteristic aroma and freedom from mustiness, mould, insects, rodent contamination, added colour and harmful substances. A contract still needs the applicable jurisdiction, sampling and test methods, laboratory result, tolerances and agreed remedies.

Crop estimates and food standards are not a delivered physical price

A current delivered ajwain price requires a defined botanical and product identity, whole or ground style, food or planting use, origin and crop, lot-specific quality and analytical results, treatment and residue evidence, quantity, package, currency, Incoterm, destination, delivery window, freight and information vintage.
