Small and large cardamom are separate products
Codex CXS 357-2024 covers small cardamom from Elettaria cardamomum. Large cardamom belongs to a different species group and a separate product standard, so its size, sensory character, processing and chemistry cannot be inferred from the small-cardamom table. Whole, opened, seed and powdered styles carry different limits
The Codex small-cardamom standard distinguishes whole capsules or pods, opened capsules or pods, seeds, powdered seeds and powdered capsules with seeds. Whole small cardamom has a 13 percent moisture maximum and 3.5 millilitres per 100 grams minimum volatile oil on a dry basis, while opened pods use a lower 2.5 millilitre volatile-oil minimum. Colour, fill, defects and chemistry travel with the lot
Whole-pod evidence should retain colour, capsule size and uniformity, fill and seed recovery, immature or shrivelled pods, mould, insect damage, empty or malformed capsules, extraneous vegetable and foreign matter, moisture, ash, acid-insoluble ash and volatile oil. Seed and powder records need their own particle, identity and adulteration controls. Sampling, laboratory method, residue and microbiological results, treatment, packaging and chain of custody remain part of the lot record.

A Codex limit is a quality boundary, not evidence of current supply or price. A delivered cardamom price still requires a defined species and style, current permitted physical observations, origin and harvest, quality results, quantity, currency, Incoterm, destination, delivery window, freight and information vintage.
