Date fruit trade begins with variety, moisture condition, product form and intended use—not a generic fruit label. Whole or pitted dates, dry dates for processing, pieces, macerated dates, paste and prepared products are separate commercial forms. Comparable offers require variety, crop and packing date, whole or pitted form, grade and inspection basis, moisture or dry designation, size, color, defects, pack, origin, quantity, currency, Incoterm, destination, delivery window and information vintage.

They separate utilized production into fresh-market and processing use. Variety, moisture condition and product form come first

Medjool, Deglet Noor and other varieties can differ in size, texture, moisture, handling and intended use. Whole or pitted fruit, dry dates for processing, pieces, macerated dates, paste and prepared or preserved products are not interchangeable. Grade, color, size, character and defects travel with the lot

USDA AMS date grades distinguish whole or pitted dates, whole dry dates for processing, pieces and macerated fruit. Grade A, B and C scoring considers color, size uniformity where applicable, defects and character. A physical record therefore preserves the exact standard and grade, variety, moisture or dry designation, size and count, color, defects, character, pit status, packaging, inspection point and arrival condition.

Crop totals do not determine a delivered date price

USDA NASS estimated 61,970 short tons of utilized U.S. date production in 2025, including 36,810 tons for the fresh market and 25,790 tons for processing, from 16,200 bearing acres. These dated measures describe domestic crop scale and use. A delivered price still needs the exact variety, product form, grade, size, pack, origin, destination, Incoterm, delivery window and current physical evidence.
